They are also helpful in weight control which is great news for mushroom lovers. They are low in fat & calories . So it makes sense to eat mushrooms daily as they also influence blood lipids, blood glucose, immunity, and offer many essential nutrients and antioxidants. -

I love mushrooms so here are some of the ways I use them .
Grilled or fried with bacon/ sausages & eggs
In a lasagna with other vegies + meat
Mushrooms stuffed with bacon, cheese & garlic sauce or
Mushroom sauce on steak
Mushroom soup for lunch
Mushroom risotto
Chicken & mushroom pie or chicken mushroom & cheese triangles !

Stuffed Mushrooms
4 rashers of bacon
4 large mushrooms
3/4 Cheese or ordinary cheese
Half cup of diced tomato
Small amount of fresh chopped garlic or minced garlic
Remove the stalks & dice
Cut the bacon into strips & fry with stalks in garlic
Mix the cheese, tomato + bacon stalks in garlic together
Place the mushrooms on a lined bake tray & spoon the ingrediants into the mushroom topping it with a bit of cheese.
Bake them for about 15 minutes till they are golden brown .

Mushroom Sauce
There are a few different ways to make mushroom sauce depending on your different likes and dislikes in food. This one uses horseradish and the one below uses wine.
olive oil, 2 tablespoons
butter, 30g
cup mushrooms, 250g, sliced
garlic, 1 clove, crushed
light sour cream, ½ cup
horseradish cream, 1 tablespoon
Heat oil and butter together in same pan on medium. Sauté mushrooms and garlic 3-4 minutes. Stir cream and horseradish through. Bring to a simmer. Season to taste.
Mushroom Sauce with Wine
30g butter
- 1 medium brown onion, finely chopped
- 1 garlic clove, crushed
- 200g Swiss brown mushrooms, thinly sliced
- 1/2 cup dry white wine
- 300ml pure cream
Melt butter in a frying pan over medium heat. Add onion. Cook, stirring, for 5 minutes or until softened. Add garlic and mushrooms. Cook, stirring, for 3 to 4 minutes or until softened.

Add wine. Bring to the boil. Reduce heat to medium-low. Simmer for 2 to 3 minutes. Stir in cream. Bring to the boil. Simmer for 10 minutes or until reduced by half. Season with salt and pepper.
